La berenjena pertenece a la familia de las Solanáceas, que incluye alrededor de 75 géneros y unas 2.300 especies de plantas productoras de alcaloides tóxicos, entre las que se incluye la belladona, la mandrágora y el beleño. Son escasas las Solanáceas comestibles. Entre ellas se encuentran la berenjena, el tomate, el pimiento y la patata.
La calidad de la berenjena se basa en su uniformidad, firmeza, color de la piel y tamaño. Por lo general, las berenjenas más sabrosas son las más tiernas y firmes, con la cáscara lisa y brillante, de color morado oscuro y de mayor peso en proporción a su tamaño. La piel no debe presentar manchas, arrugas ni zonas blandas. Un truco para saber si la berenjena está bien madura consiste en hacer una ligera presión con los dedos sobre la piel. Si los dedos dejan huella, la berenjena está madura. Por ser un alimento perecedero (aguanta poco más de diez días), conviene manipularla con cuidado y refrigerarla hasta su consumo. Es aconsejable mantenerla aislada del resto de verduras y frutas, ya que reacciona con el etileno producido por la respiración de otros vegetales y se estropea antes.
La berenjena tiene una gran cantidad de ácido clorogénico, un potente antioxidante. En la piel de esta planta se han identificado antocianinas (flavonoides), pigmentos que le confieren el color morado, con propiedades antioxidantes. Los estudios indican que ciertos flavonoides presentes en la berenjena ayudan a disminuir los niveles de colesterol mediante una modulación de su metabolismo y una mayor excreción del mismo. El reconocido papel benefactor de los antioxidantes, convierten a la berenjena en una verdura recomendada para toda la población por el destacado papel que tienen estos compuestos en la prevención de enfermedades cardiovasculares, degenerativas y del cáncer.
Debe tomarse siempre cocinada, nunca cruda. Asada o salteada tiene sabor agradable, pero no así hervida. Cuando se prepara al vapor hay que cortarla en rodajas y provocar un fenómeno de ósmosis añadiendo sal. Así se intercambian líquidos de manera que los compuestos que le dan sabor amargo salen al exterior, pues el líquido huye de donde hay menos densidad hacia donde hay más, potenciándose además su sabor agradable que está determinado por sustancias no solubles. Si se quiere freir, se recomienda sumergir los trozos de berenjena en agua con sal durante 24 horas. Dado que la textura de la pulpa es muy cavernosa (llena de aire y agua) si se fríe directamente actúa como una esponja absorbiendo gran cantidad de aceite, y con ello excesivas calorías. Pero después de introducida en esta solución salina, este efecto desaparece y la berenjena, saturada de agua, apenas absorbe aceite.

Rellenas y al horno son lo más rico que hay.. aunque no se si así las recomiendas, con tanto queso fundido y bechamel :)
ResponderEliminarSi no se está siguiendo una dieta de adelgazamiento noy hay ningún problema en tomarlas, incluso si se está a dieta también (añadiendo un poco menos de queso y bechamel). Recuerda que el queso nos aporta calcio y proteínas, y la leche de la bechamel también :)

Yo tengo berenjenas en el huerto en temporada, las consumo de diferentes maneras. Son muy versátiles, pero para una cena ligera mis preferidas son las que corto a lo largo, hago unas hendiduras en la pulpa y aliño con ajo y perejil muy picaditos, sal y aceite. las pongo al microondas entre 10 y 15 min. y están deliciosas
